Strawberry Muffins {Healthy}

Hello!!! I would love to introduce myself, I’m Didi and I blog over at Didi’s Blog. I am very honored to be here, and could not be more excited about this amazing idea! In case you don’t know what we do here at Pintesters, it’s very plain and simple: we test things we find on pinterest!

My husband and I are very into a healthy lifestyle. We try to eat clean {or unprocessed, all natural} when we can and I am always on the look for healthy alternatives, and easy meals. I was very excited when I found this Strawberry Shortcake Muffins recipe on pinterest. No flour or large amounts of sugar, just old fashioned oats, non-fat greek yogurt and fresh strawberries. Sounds amazing!

But is it?!

The first thing I can say about the recipe, is that it is extremely easy. I had all the ingredients at home, except for the fresh strawberries. A quick stop by the store on my way home from work solved that!

Looking at the pictures that the original recipe has, my batter seems a lot thicker and dryer than their pictures. I’m a little worried about this, but I continue on following the recipe step by step.

I add my strawberries, which next time I will definitely chop into smaller pieces. And bake it for 20 minutes.

They smelled wonderful!!!!

I think this recipe is a great starting point! It was very dry, and the best bites were the ones with lots of strawberries. This is the main reason why chopping the strawberries into small pieces would be best. Maybe even a strawberry puree kind of thing? I’m thinking mashed bananas would be wonderful in these too.

I did use paper muffin liners, because I did not have silicone liners {I need to get some!} and the muffins stuck to the liners. The recipe does warn you about this, and I’m warning you again. They stick!

All in all I give it 3½ stars out of 5. I’m going to play around trying to get the consistency of the batter right, and let you know if I find a solution! So if you want a healthy snack, I think these are a cute and yummy alternative! You should try these whenever you feel like something new!

Review of Overnight Oatmeal by Patricia Feaster-Kimmerle

Patricia  made this sweet treat and reported that it tasted amazing!!! but beware, although the ingredients are healthy it still has a large calorie punch. To cut the calorie intake, recommend splitting it into 2 containers (still a decent serving amount)

Overnight Oats

Makes 1 large serving.

  • ½ cup rolled oats (not quick cooking)
  • ½ cup plain Greek yogurt
  • 2/3 cup milk
  • 1 tablespoon chia seeds

Mix all the ingredients in a bowl or jar, cover with a lid or plastic wrap, and allow the mixture to sit in the refrigerator overnight. In the morning, stir in the desired mix-ins and enjoy (come up with your own custom flavors!)
