This week my Mother made pineapple upside down cupcakes she found on Pinterest at http://thesouthernladycooks.com/2012/03/08/pineapple-upside-down-cupcakes/
She was testing the recipe to see how it would come out. She belongs to a Senior Woman’s group in Strongsville Ohio and they each bring in a treat when it is their birthday and she thought it would be a nice thing to bring in for her special day. I tried the batch she made and I think they came out great. They were very moist, flavorable and what I liked the most was that the topping was on the bottom of the cupcake still in the wrapper waiting to be opened. It was a special treat to take off the wrapper and turned upside down. It was not messy and would be very special at a party, easy to carry and clean up. My Mother was concerned that they were too sweet but I think they were just right.
